The grapes are direct pressed Sicily The grapes are direct pressed then fermented and aged for one year in large qveri anforas that are buried in the ground Terroir located around Le Clos at an altitude of 250m in a naturally protected area the wine was basket pressed and aged in neutral French oak barrels No punch downs were performed and only gentle pour overs were practiced for cap management in order to encourage carbonic maceration character in the whole clusters
